Spring 2006

Greetings Members,
It's hard to believe Spring is over, seems the time just continues to fly by. It's been a terrific year so far for the Chapter, we have already had some great programs. We have planned a fun summer for you, and are also busy working on our fall events, there are some real surprises coming up!
We are finishing up our 3rd CPCE Study Group, and plans for a fall study group are in the works. Please contact Angie Kemp, our CPCE Chair, and Board member Angie Kemp at akemp@thedana.net for more information if you are interested in joining this group. Congratulations again to all our current and future CPCE members for their dedication and hard work! At last count, we are tied with Florida for having the most CPCE's in the Nation. With the "CPCE" designation after your name on a business card, you have a distinct advantage over most other caterers, and the added knowledge to make a difference in your business. <more...>

May-June Membership News

We had many guests at the May dinner, that were associates of our members. We encourage you to bring these professionals that are new to the industry, to better acquaint them with all that NACE has to offer. If you can't make it to a meeting, why not "gift" it to them, and have your property still be represented.
If you're changing jobs, you might be able to "take" your membership with you, and the person replacing you, might "get" your membership for up to 6 months...free! Read about this, under the "Provisional" definition.

| Our May Meeting

Our May dinner meeting was held at the Hilton Mission Valley and our speaker for the evening couldn't have been more appropriate for the occasion. The Hilton is in the final stages of a mega-remodel, and her topic was "Staying Calm in the Midst of Chaos". Carolyn Gross is an award-winning author and internationally acclaimed speaker who also just happens to be an ex-Director of Catering...talk about "knowing thy audience"...but more about her later.
The Hilton is done in soft shades of greens and muted browns...slightly Zen-Asian, slightly Metro, but oh-so-calming-to-the-senses. The catering team lead by Judy Pratt did an outstanding job. The reception and dinner were held in Carmel Ballroom and featured Judy's newest creation, "Beyond Buffet". Tables were covered in form-fitting black spandex for a sleek contoured feel. Appetizers by Appetizers and Inc. were kept warm on Asian-style griddles, and the back bar was done in minimalist silver metro shelving. The room was up-lit in shades of burnt orange. Dinner tables were covered with crushed organza cloths provided by Special Event Productions, which anchored the room in a gentle earth-toned appeal and Hartworks Floral provided dramatic centerpieces that floated well above the line of sight, so dinner guests could converse across the table without having to dodge flowers.
Dinner was well designed and began with Baby Greens with Roma Tomato, Candied Walnuts & Gorgonzola served with Citrus Vinaigrette. Our entrée was perfectly braised Lamb Shank with Baby Summer Vegetables and Mini Polenta Cakes. A house-made Strawberry Napoleon was served for dessert and was just light enough to be a perfect counter balance to the rich dinner we had just eaten.
When our speaker was introduced, Mike Hogan made mention that she is a former Director of Catering, and about five minutes into her presentation, it was necessary for her to take her audience into hand. She was ready for us, and had some playful banter with some guests sitting in front. It felt like going to the Principle's Office, only she was cool! She spoke on Categories of Chaos and Self-Efficacy, and she gave us secrets on how to channel the power needed to produce intended results. Her dialogue was direct and spoken from the heart, and we emerged with the tools to be Masters of Experience. The one thing that she wanted us all to come away with, was to never forget to do self-evaluation and "take time to look in the rearview mirror" before beginning a new project. The team at the Hilton should take her advice with pride when the remodel is complete and their guests are checking in at their beautiful new hotel! |
Affiliate's Corner

She is a reflection of her work...colorful, unexpected, whimsical and show stopping. She loves to work with people and enjoys the creativity that every event allows her to display. Her centerpieces were a fragrant, beautiful prize for the lucky raffle winners. It's always a pleasure to introduce Frankie of Hartworks Florals.
This very popular and talented young man was born in Mason City, Iowa. He attended Arizona State College and enjoys acting and the theatre. He worked for the original Bobby McGee's Conglomeration for 9 years and at 10 different clubs in Arizona and California. He moved to San Diego in 1983 to open up Bobby McGees here. In the 80's he worked for Fantasy Fashions and auctioned off ladies dresses in clubs during happy hours.
He loves to golf...had his first hole in one last year...and spends his spare time enjoying his wife Theresa, Lucky his cat and playing any golf course within driving distance. He's friendly, outgoing and always promoting stress-free fun as the DJ at Entertainment At Large. Remember him for his amazing auctioneer skills for your fundraisers...we welcomed my favorite Irishman, Michael Patrick Hogan.
A special thanks to Keith Danon from Music As You Like It for providing a disc jockey for the cocktail and dinner hours. Music washes away from the soul the dust of everyday life! Bravo once again to Brant Bender of Phoenix Photography for making us look so good on the photo page.
